  • 4 large portobello mushroom caps, stems removed

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 2 beef patties (or plant-based patties for a vegetarian option)

  • 2 slices of cheddar cheese (optional)

  • 1 small red onion, sliced

  • 1 tomato, sliced

  • 1 small avocado, sliced

  • 1/2 cup fresh spinach leaves

  • Mayonnaise, mustard, or your favorite keto-friendly sauce

Directions

  • Preheat your grill to medium-high heat.
  • Brush both sides of the portobello mushroom caps with olive oil and season with salt and pepper. Place them gill-side down on the grill. Cook for about 5-7 minutes on each side or until they are tender and have grill marks.
  • While the mushrooms are grilling, cook the beef or plant-based patties on the grill for about 4 minutes on each side or until they reach the desired doneness. If using cheese, add it to the patties during the last minute of grilling to allow it to melt.
  • To assemble the burgers, place one grilled mushroom cap (gill side up) on a plate. Layer on the spinach leaves, beef patty with cheese, slices of tomato, avocado, and red onion. Top with your choice of sauce and cover with another mushroom cap (gill side down).
  • Serve immediately while warm.
