Ingredients

  • 1 large head of cauliflower, riced

  • 2 tablespoons sesame oil

  • 2 eggs, lightly beaten

  • 1 small onion, finely chopped

  • 1/2 cup frozen peas and carrots, thawed

  • 2 garlic cloves, minced

  • 1 teaspoon ginger, grated

  • 3 tablespoons soy sauce (or tamari for a gluten-free option)

  • 2 green onions, chopped

  • Salt and pepper, to taste

  • Optional: cooked chicken, shrimp, or extra vegetables for more protein

Directions

  • Pulse the cauliflower in a food processor until it resembles rice grains. Be careful not to overprocess.
  • Heat half of the sesame oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Remove them from the pan and set aside.
  • Add the remaining sesame oil to the pan. Sauté the onion, peas and carrots, and minced garlic for about 5 minutes, or until the onions are translucent and the vegetables are tender.
  • Stir in the riced cauliflower along with the grated ginger. Continue to cook for about 7-8 minutes, until the cauliflower is soft.
  • Add the cooked eggs back into the skillet. Pour the soy sauce over the mixture and stir well. Cook for another 2 minutes to let the flavors meld.
  • Season with salt and pepper to taste. Garnish with chopped green onions before serving.
